What is more Romantic than Champagne and Chocolate? Champagne and Chocolate in Silver Falls State Park! Join us for this special class with Executive Chef Peter Dwyer, that is structured around the Culinary Arts and is inspired by the upcoming romantic holiday. Tickets are $42.50 per person and advanced reservations are required. Included in your package: A sparkling wine tasting of Cava, Prosecco, and Champagne A dozen homemade chocolates A step by step guide on Chocolate Tempering A packet containing all the information on sparkling wines Four hours of information sharing as a Culinary Education Seminar Throughout the course, you’ll learn the differences between the three main types of Sparkling wine; Cava, Prosecco and Champagne, and maybe even find a new favorite beverage. As we move through a sparkling wine tasting, you’ll learn through demonstration and interaction how chocolate is made and where it is grown, how to make homemade fine chocolates, the correct method and reasonings for tempering chocolate, and how to make the ultimate hot chocolate and chocolate mousse. Also available will be 2 varieties of each Prosecco, Cava, and champagne to purchase so when you go home and want to make something you learned in our class, you can impress your partner or friends with your knowledge of a decidedly unique classification of wines, and the mythical but loved Chocolate. ------------- About Peter Dwyer CEC, CCE Hailing from New England, Chef Peter enjoys the cuisines of the Northern Latitudes of the United States, utilizing classical French cooking methods and subtle Asian influence learned in his extensive travels across Asia. A 2000 graduate of The Culinary Institute of America in Hyde Park, New York, Peter discovered his love of the Pacific Northwest in Seattle as a Sous Chef at the Space Needle's Sky City Restaurant. In addition Peter has been very active in the American Culinary Federation as a competitor earning more than 25 professional medals, and being appointed as 1 of approximately 100 Approved Culinary Competition Judges in the Nation. After teaching College Culinary Arts for almost 5 years, he earned his Certified Executive Chef, and Certified Culinary Educator titles. He now works on local, seasonal food, new ways to use hazelnuts and huckleberries, and making pies and cinnamon buns in the foothills of the Cascades
